My idea is to make these changes without having to buy a lot of items that I never use. All of these can be made with things you always have on hand without meat and cheese!!!

Mexican Casserole
Spaghetti
Bean Tacos or Crunch Wraps
PB and J Sandwiches
Pizza
Baked Potatoes
Pancakes and Fruit
Split Pea Soup
Meatless Minestrone
Pot Pie

Haha, fair enough since we have exactly the same goals: cheap, don't waste a lot of food, and healthy. Basically we want it all. This week our menu includes Asian Cabbage Salad, Fried Rice, Mediterranean Minestrone Casserole, Cornbread, and Spinach & Feta Pasta. All of those recipes, except the Spinach & Feta Pasta are already on our blog under the recipe tab or if you search in the top right corner. Some of my all time favorites that we rotate through (also on the blog) lentil chili, uncanned chili, and cabbage soup. All three of those are really healthy, really easy, vegan, and cheap. We usually have some in the freezer at all times. Do you have a good split pea soup recipe?
