Recipes

 Pumpkin Pie (Vegan Tofu)

Ok so I'm not a huge fan of soy mainly because it's so genetically altered and we really don't need to spend that much money on "fake" hotdogs, hamburgers etc to get our protien. BUT with Thanksgiving coming up I think it's fun to try new things. I made this 2 yrs ago and it was a HIT!

1 15 oz can pumpkin puree
3/4 c brown sugar
1/2 t salt
2 t cinnamon
1/2 t ginger
1/4 t ground cloves
1/4 t allspice
1 10 oz soft tofu

mix all in food processer and pour in unbaked pie shell

bake @ 425' 15 min
lower oven to 350' and bake 40 more min

serve chilled




Hippy Freaky Double Chocolate Peanut Butter Cookies (I made this recipe up!!)

3/4c non-dairy butter (or coconut oil)
1/2 c adams peanut butter
1 c sugar
1/2 c brown sugar
3 T blackstrap molasses (optional)
3/4 t baking soda
2 eggs
1 t vanilla
3/4 c whole wheat flour
1/2 c (or more) unsweetened cocoa
1 1/2 c rolled oats (NOT QUICK OATS!)
1/2 c millet (or 1/2 cup more oats)
3/4 c semisweet chocolate chips

bake 10 min at 375'

Here is another one that we just ried tonight...

Black Bean Veggie Burgers

I didn't really follow the directions I have to admit. I used carrots instead of peppers, kidney beans and pinto beans instead of black beans, no hot sauce, and tortilla chips instead of bread crumbs. They turned out great!!! (They were a little spicy for the kids) I topped them with honey mustard, lettuce and tomato! YUMYUM!

Ingredients


1 (16 ounce) can black beans, drained and rinsed

1/2 green bell pepper, cut into 2 inch pieces

1/2 onion, cut into wedges

3 cloves garlic, peeled

1 egg

1 tablespoon chili powder

1 tablespoon cumin

1 teaspoon Thai chili sauce or hot sauce

1/2 cup bread crumbs

Directions

1.If grilling, preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil. If baking, preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet.

2.In a medium bowl, mash black beans with a fork until thick and pasty.

3.In a food processor, finely chop bell pepper, onion, and garlic. Then stir into mashed beans.

4.In a small bowl, stir together egg, chili powder, cumin, and chili sauce.

5.Stir the egg mixture into the mashed beans. Mix in bread crumbs until the mixture is sticky and holds together. Divide mixture into four patties.

6.If grilling, place patties on foil, and grill about 8 minutes on each side. If baking, place patties on baking sheet, and bake about 10 minutes on each side.
